A short but strong burst of umami that then playfully transitioned to refined sweetness with a touch of grassy acidity. The grassy acidity is reminiscent of fresh cut grass. I do love that there’s no bitterness to this matcha, but it has a very minimal astringency that goes almost unnoticeable in lower temp. When I used my usual ratio, it was a smooth umami coupled with creamy sweetness bordering on tart territory. Every note I tasted in usucha got a power boost, particularly the sweet notes that lingered just enough to keep me coming back for more. With 50/50 ratio, it was an intense grassy umami with already notable astringency. Compared to Kiwami Choan, this has a more intense umami, a grassy subdued sweetness, and a little bit of astringency. I was hoping it would be a delicious sip, but all I get was a sharp punch and mediocre sweetness. I do wish there’s more to it because the profile isn’t giving justice to the price tag. Overall, I find Choan to be an expensive and straightforward matcha.
