Is it worth trying this underrated matcha? Let's find out. I love that I can create microfoams easily with this. As an usucha, I was hit with a mellow umami and vegetal notes, followed by an underlying bitterness and subtle sweetness that’s hard to discern. It was creamy, as expected from gion tsujiri, and slightly powdery in texture. There was also some tart notes that lingered on alongside the bitterness which is kind of off-putting. The astringency is minimal which balances it out. As a latte, I definitely enjoyed it more. My usual ratio didn’t work out with this blend, so I increased the milk ratio. The tartness all but disappeared and the texture was smoothed out. For me, it's worth trying once. I do think it’s worth trying for the experience.
