In terms of fragrance, this matcha has a sweet grassy aroma, and a bright green color typical of a high grade matcha. It has a rich and luxurious velvety texture that melts into the palate. Its primary note was a deep umami, beautifully balanced by light, sweet notes. The umami gracefully evolves into a deliciously nutty umami profile with grassy undertones, subtly reminiscent of cacao nibs. Absolutely no bitterness and astringency, ensuring a smooth experience and finishing off with a lingering umami aftertaste. The overall profile was noticeably lighter compared to koicha. The cold temperature almost entirely suppressed its delicate complexity, allowing only the unadorned umami notes to persist. Against expectations, adding milk did not diminish the overall profile. The absolute lack of bitterness and astringency meant no sweetener was needed, resulting in a naturally smooth and creamy grassy umami latte. The texture still remains incredibly smooth, no bitterness and astringency, albeit with a subtle, gentler umami finish. Given its exorbitant price, this matcha is undeniably a special occasion treat. Though it shines brightest when prepared as koicha, it holds up exceptionally well as a latte.
